The Saint Pierre 2021 vintage produced 8,463 bottles from 1.62 hectares of Clairette, Chardonnay and Rolle. Organic viticulture on a clay-limestone terroir. Harvested on the 24th and 25th of August and on the 17th of September for the Clairette, it was pressed in the morning, settled and then fermented at low temperature for an average of 25 days. It was aged for 10 months in stainless steel vats in order to keep a nice freshness.
