The Sainte Ombeline cuvée comes from a plot of Chardonnay protected by a wall surrounding the Abbey. This protects the grapes from the attack of the surrounding sea salt. This is why this cuvée is produced with 100% indigenous yeasts. It is the perfect expression of the terroir of St Honorat!
The 2024 vintage was marked by contrasting weather conditions, with significant rainfall. After five years of drought, the initial heavy rainfall was welcome for replenishing water reserves. However, flowering suffered from this humidity, and the risk of mildew persisted right through to veraison. Only August offered dry, warm conditions, enabling the grapes to ripen satisfactorily. Although yields were low, the aromas of the vintages were promising. The year's relatively cool climate also contributed to good balance and freshness in the wines.

The Sainte Ombeline 2024 cuvée produced 1,800 bottles from a 0.28 ha plot of Chardonnay in the shadow of the fence wall. Organic viticulture on a clay-limestone terroir. Harvested in the morning of August 23, sorted, pressed and tapped for spontaneous fermentation with indigenous yeasts. This lasted between 34 and 40 days depending on the barrel, followed by 10 months of maturation with some light stirring to perfect the beautiful aromatic length.
