Saint Sauveur - 2023 - Organic Wine

This cuvée has a captivating purple color. The first impression on the nose is one of chiselled aromas, combining
notes of blackberry, a subtle touch of violet and hints of cocoa.

On the palate, silky tannins harmonise with fine acidity, giving way to powerful, full-bodied and generous aromas. Spicy, subtly peppery and mentholated flavours mingle with nuances of coffee, leather and blueberry, filling the palate with intensity.

Remarkably long on the palate, with a fresh, vibrant finish.

Vintage 2023: a challenge under the sign of heat and drought

The year 2023 was marked by demanding climatic conditions for the Mediterranean region, with persistent heat
and notable drought. The winter was mild and lacking in rainfall, setting the scene for an atypical vintage.

In spring, vegetative growth was vigorous, supported in May by unseasonably wet spells, with almost 150 mm in
one month. This exceptional rainfall meant that we had to be extra vigilant in the face of the threat of mildew and
powdery mildew, which were particularly critical during the flowering period, a key time for the vines.

This life-saving rain enabled the vines to hold out until the harvest, despite a total absence of rainfall during the
summer. Thanks to the heat, the harvest came exceptionally early: from 10 August, the first Pinot Noirs were
harvested under a blazing sun. A spell of heatwave made this a trying time, but the last grapes were in the vats by
4 September, much earlier than usual, when harvesting generally finishes in the second half of September.

This anticipation has enabled us to maintain balanced parameters in terms of sugar and acidity, making it possible
to create cuvées of great finesse. Yields, at around 40 hectolitres per hectare, are in line with the annual average.
Thanks to the natural concentration of the grapes and meticulous work in the cellar, the 2023 vintage stands out
for its remarkable aromatic complexity and a quality that testifies to the resilience of the Saint Honorat terroir. A
miracle that has been repeated, even in the face of extreme weather conditions.
