The Sainte Ombeline cuvée comes from a plot of Chardonnay protected by a wall surrounding the Abbey. This protects the grapes from the attack of the surrounding sea salt. This is why this cuvée is produced with 100% indigenous yeasts. It is the perfect expression of the terroir of St Honorat!
The Sainte Ombeline 2021 cuvée produced 1,116 bottles from a 0.28 ha plot of Chardonnay in the shadow of the fence wall. Organic viticulture on a clay-limestone terroir. Harvested in the morning of August 23, sorted, pressed and tapped for spontaneous fermentation with indigenous yeasts. This lasted between 34 and 40 days depending on the barrel, followed by 10 months of maturation with some light stirring to perfect the beautiful aromatic length.
