A delicate carmine color with ruby highlights adorns this cuvée. The first nose is delicate. Intense and deep aromas of redcurrant, violet and a touch of tobacco. Worn to the lips, this fine beverage reveals a delight of fleshy fruits, a greedy freshness, the silky tannins of a racy and unique pinot noir matured under the Mediterranean sun, a tribute to the distant Burgundian hillsides sublimated by the Cistercian monks.

The Saint Salonius cuvée has produced 2,500 bottles. Organic viticulture on a clay-limestone terroir. Harvested in the morning on August 9, sorted, vatted with 50% whole grapes, pumped over at low temperature and fermented for 20 days. Decanted and put into oak barrels for a malolactic fermentation, the maturation lasted 20 months.
